Junmai
Junmai literally translates as “pure rice” and in the absence of the word ginjo or daiginjo following it, it represents a category on its own and can technically be made from any rice polishing ratio. This is sake that is brewed without the use of brewer’s alcohol, and doesn’t use highly polished rice like Daiginjo. Junmai has rich flavors of rice enjoyable at warm temperatures, and the fuller flavor profile generally can be paired with stronger flavors.

Chiebijin Junmai 65 720ml
The sake was named “Chie Bijin” because the founder’s wife’s name was “Chie.”
Approximately 130 years after its founding, the 6th generation brewer, Atsuyuki Nakano, opened Chiebijin in hiragana. The purpose is to show the existence of Oita’s sake and beautiful women to the whole country.
Oita Prefecture is an area where fish dishes, including Seki mackerel and Seki mackerel, which are known as high-quality fish, are well-established. Chie Bijin Junmai Sake, which has been loved locally for many years, is destined to create a sake that goes well with fish dishes. That’s the part that can’t be changed.
Chiyomusubi Tokubetsu Junmai 55 720ml
Sturdy, unfiltered, well-rounded, and all-around good sake! A real crowd pleaser, this sake starts with the pleasant taste of lychees, followed by a bit of juiciness, then leaves you with a clean, dry ending. The tropical notes performed very deliciously alongside a little spice – blistered shishito peppers were a great pairing! This sake is considered tokubetsu (special) because the brewer takes special care in limiting water absorption during washing and uses a special blend of yeasts including one for daiginjo. Enjoy at room temperature.
Dassai Umeshu 720ml
The “Dassai Umeshu“. It’s a honkaku umeshu meaning it contains only the base alcohol which is DASSAI 23, sugar, and plums — thus no added flavoring, coloring, or souring agents. The liquor used in the new umeshu is of course Dassai’s world-famous Junmai Daiginjo 23%, in which Yamadanishiki rice being milled down to 23%.
To craft the ultimate Junmai Daiginjo sake Dassai 23, Yamada-Nishiki rice is first polished down to 23%, making it one of the most polished sakes in the world. It’s polished 24 hours a day for 7 days straight—that’s 168 hours spent on polishing!
Hakushika Junmai Yoshino Taru Sake 300ml
A semi-dry sake, full-bodied, with aromas of cedar aged in Yoshino barrels. Drink using a wooden masu cup. “Yoshino” is named after the Yoshino Forest in Nara prefecture. Yoshino cedar is a fragrant wood and has been the preferred wood for producing fine Japanese sake barrels called taru.

Kinryo Kusukami (Camphor Tree God) is made using yeast isolated from the 900 Year old Camphor Tree that stands guard on the Kinryo brewery grounds. Legend has it that the Kotohira Tengu used to rest at this tree.
Kitaya Tokubetsu Junmai Yume Ikkon 720ml
Using a local rice “Yume-Ikkon” originating from Fukuoka and polished down to 60%. This Junmai is slowly fermented in low temperature. As a result, it expresses rich and full-bodied taste along with a fresh and fruity scent. It goes well with a wide range of dishes.
